Exactly. Anyone who is thinking that Alvarez can just jump to Bellator and make cash is sadly mistaken.
The deals may be the exact same - but Bellator cannot offer what the UFC deal offers, so they have no way in hell of actually keeping up with their contract (i.e. the incentives that are offered on the contract cannot be obtained under the Bellator banner).
Eddie would be leaving a ton of cash on the table by signing with Bellator and would be screwing himself indefinitely in the process.

he also gets $375,000 to sign and show up to spike tv spots.
i know it is a huge if, but if he enters a tournament and goes for 8 straight wins against lower level opponents in 2 years he makes $1,775,000.
i think that would be more than he could make in the ufc over 2 years. also much less hazardous to his health in bellator compared to ufc
It's not more than he would make in the UFC over 2 years.
Assuming he would have gotten PPV buys at a GSP headlined event - he would have approached that 1.775 million with his PPV bonus and signing bonus alone.
